Guatemala Finca Los Humitos CO2 Decaf
Guatemala is home to some exceptional coffees, and we're proud to bring you this decaf from southern reaches of Guatemala, where Lake Amatitlán glistens and the Pacaya volcano towers high above the many villages scattered throughout the region. One of these is Los Humitos, the origin of this coffee. The soils here are rich, thanks to the area's many volcanoes, making it ideal for growing Bourbon, Catimor, Caturra, Catuaí and Anacafé 14. The beans in this lot have been fully washed and milled before being decaffeinated using the entirely natural CO2 process, which preserves the inherent flavour of the coffee.

About Carbon Dioxide Process
Green beans are steeped in fluid-state CO2, to extract 99.9% of the caffeine. CO2 is highly selective to caffeine molecules, leaving the remaining chemical composition of the beans intact, so that the inherent flavour, aroma and mouthfeel of the coffee are unaffected.
About Guatemala
Coffee took off in Guatemala in the 1850s, in the rush to find a new crop to replace the collapsing indigo trade. By 1880, it represented 90% of Guatemala’s exports, but wild growth resulted in the displacement of indigenous peoples, tipping the country into a civil war over issues related to land distribution, poverty, hunger and racism, which rumble on even now.

Today, the country ranks in the top 15 coffee producers, with Bourbon, Typical, Caturra and Catuai beans harvested between December and April.
